Nojito
Lime, mint and soda over crushed ice – the Mojito, minus the rum
Fresh mint, lime and sugar built over crushed ice and topped with plenty of soda water. Cool, herbal and zesty, with a touch more lime and sugar than a Mojito to make up for the missing rum. A hot-weather refresher anyone at the table can enjoy.

Ingredients
- 10 leavesMint leavesmuddled
- 25 mlFresh lime juice¾ oz
- 20 mlSimple syrup (1:1)¾ oz
- 120 mlSoda waterto top4 oz
- GarnishMint sprig
≈ 183 ml served
Substitutes: Fresh lemon juice can stand in for Fresh lime juice. Rich demerara syrup (2:1) can stand in for Simple syrup (1:1).
Method

Drop the mint leaves into a highball glass and press them gently with a muddler to release their oils.

Add the lime juice and simple syrup.

Fill the glass with crushed ice and churn with a bar spoon.

Top with soda water, crown with more crushed ice and garnish with a mint sprig.
Bartender's notes
- Add a few slices of cucumber or a handful of raspberries to the muddle for an easy variation.
- Swap part of the soda for tonic water for a drier, more grown-up finish.
